Beans...according to schoolyard song…are good for your heart. The health benefits go way beyond that, however.
They provide a major source of soluble fiber, which, can grab and collect cholesterol-containing bile in the digestive tract and remove it from the body before it's absorbed. According to studies, eating a cup of cooked beans a day can lower your total cholesterol by up to 10 percent in 6 weeks. Though that may not seem like much, it actually decreases your risk of heart disease by 20 percent. A study conducted at the University of Kentucky has shown that only three weeks of increased bean intake (3/4 cup of navy and pinto beans) lowered the men's cholesterol by an average of 19%. This reduces the risk of heart attack by almost 40 percent.
Another benefit of increasing you bean intake will lower your appetite because of the high fiber content. An appetite suppressant that tastes great…what more could you ask for?
Those suffering from diabetes are also benefitted by eating beans. The soluble fiber in beans helps to create more insulin receptor sites. These sites are like tiny docks for the insulin molecules to connect to, allowing the insulin to get to the cells that need it, instead of floating freely through the bloodstream, which can cause problems. Because of the higher risk of heart disease in diabetes sufferers, beans serve an extra benefit by keeping their cholesterol low, thus reducing their risk.
In addition to these benefits, the compound found in beans-isoflavins and protease inhibitors- have been shown to keep normal cells from turning cancerous and inhibit their growth.
Soybeans contain phytoestrogens, a form of estrogen, which are believed to reduce the risk of breast and prostate cancer, by blocking the overproduction of estrogen and testosterone. The hyperactivity of these hormones have been shown, in some studies, to increase the growth of some cancerous tumors.

Black Bean Soup
2 cups dried black beans
14 1/2 ounces diced tomatoes
2 tablespoons olive oil
2 cups diced carrots
5 garlic cloves, minced
2 cups chopped bell peppers
2 cups chopped onions
1/4 cup chopped celery leaves
2 cups chopped celery along with the leaves.
10 cups water
1 teaspoon dried cilantro
1 teaspoon dried oregano
1/8 teaspoon cumin
salt and pepper to taste
  1. Soak the beans overnight; drain.
  2. In a large soup pot, heat the olive oil.
  3. Add in the chopped peppers, garlic, carrots, onion, celery and celery leaves.
  4. Cover and cook for about 10 minutes (until the vegetables start to soften).
  5. Add the water, canned tomatoes, oregano, cumin, cilantro, salt and pepper.
  6. Bring to a boil, then add the drained black beans.
  7. Bring to a boil again and then reduce the heat and simmer for about two to four hours (or until the black beans are tender).
