Sweet! A breakfast dessert that's healthy too

We were visiting our friend Lacy the last couple of days. She and I had a great time cooking up a delicious meal together last night. And, when I got up this morning, she was cooking up a tasty treat that was healthy enough for a breakfast and sweet enough for a dessert.
After a trip to the local farmers' market a few days ago, she had fresh apricots, pears some figs a friend had given her from his tree. With a few simple ingredients added to the skillet, she had an amazing breakfast dessert.
It was so easy and quick that it could served every day, though I would probably save it for special occasions. You can serve it alone or with over a few tablespoons of thick Greek yogurt. It would also make a yummy topping for ice cream, creme fraiche, pancakes or waffles.
Try the recipe with whatever fresh fruits are in season. Apples and berries would work well together or even papaya and mango…the recipe is only limited by your imagination.
We enjoyed it for breakfast, but it would certainly be a great addition to any meal.
Lacy's Pan-Seared Fruit Breakfast Dessert

1/2 cup honey
2 1/2 tablespoons fresh lemon juice
1/4 teaspoon dried lavender blossoms
12 apricots, halved and pitted
18 fresh figs, halved lengthwise
12 pears, sliced

· In a large nonstick skillet, boil the honey with the lemon juice and lavender (use some dried thyme if you can’t find the lavender blossoms) over high heat for about a minute until they are reduced slightly.
· Arrange the pears and the apricots in the skillet, cut sides down. Cook over high heat for about two minutes until they are just tender; turn them over and cook for another minute until they are softened.
· Using a slotted spoon, transfer the apricots to your plates.
· Add the figs to the skillet and cook over high heat, about one minute per side.
· Spoon the figs and juices over the apricots.
