Healthy, fast, and inexpensive meal. Ole!

Does being a vegetarian mean no more "junk food"?
No way!
But, because you use fresh veggies and low fat cooking methods, you can take a lot of the junk out of your favorite comfort foods. I love Tex-Mex food, but - of course - I don't eat the meat or the canned refried beans that are cooked in animal fat.
So, what do we do?
It's easy so to take some left overs and turn them into a delicious, inexpensive Mexican lunch or dinnner that'ssure to satisfy even the hardiest appetite...and you can put the meal on the table in just a few minutes.
If you go to that taco restaurant that is currently offering volcanic menu items, you'll take in some 43o calories with their Half Pound Cheesy Bean and Rice Burrito. You can cut those calories by a just under a half by making this yummy recipe at home. (I used the calorie calculator at TheCalorieCounter.com to add up the calories in each of the ingredients t0 come up with an estimate of the nutritional value of my recipe.
Don't forget: If you're counting calories to lose weight, be sure you get enough exercise as well. You can't just eat less if you're trying to drop pounds.
Simple Vegetarian Burritos
1 8-inch tortilla
3 tablespoons of rice, cooked
5 thin slices of green pepper
5 slices of onion
1 tablespoon shredded soy cheddar cheese
1 tablespoon of black beans
Salsa:
3 tablespoons diced tomato
1 teaspoon ground cumin
1 teaspoon lime juice
salt and pepper to taste
hot pepper sauce to taste
  1. Mix tomato, cumin, lime juice, salt, pepper and hot sauce in a blender to make a quick salsa.
  2. Put the salsa on the tortilla and top with rice, green pepper onion, soy cheese and black beans
  3. Fold up, burrito style
  4. Heat in a preheated 350 degree oven for five minutes.
