If you knew sushi...

When some people say sushi they think raw fish. Not me…I think fresh veggies.
Sushi is like art and the vegetables are a great medium with which to express yourself…colorful and tasty.
Sushi has many health benefits. It’s low in saturated fat and high in minerals. If you add tofu to the mix, you increase the protein content as well.
Nori is a great source of minerals found in the ocean and vinegar acts as an important factor in promoting cell metabolism. The vinegar in sushi can also help lower your body fat level…just a little.
As you set off to make sushi, you can use nearly any vegetable in your sushi; you are only limited by your creativity and resources. However, there are some traditional combinations that you may want to try.
· Cucumber, cream cheese and avocado: This vegetarian sushi has the perfect combination of smooth and crunchy textures. Keep in mind that it is higher fat than some of the other vegetarian options because the cream cheese and avocado are both high in fat.
· Tofu and Green Onions: This protein-packed sushi is low fat and delicious. You can try using fresh or grilled.
· Mushrooms: While many types of mushrooms are popular in vegetarian sushi, Shitake and Baby Portobello mushrooms are the best because they are small.
· Roasted eggplant and zucchini: For a hearty vegetarian sushi, try roasted eggplant and zucchini. This is a very low fat and healthy option and it’s got a really bold flavor.
· Carrots, radish and cucumber: This is a crunchy choice. Cut the veggies in thin slivers and wrap them in the center of a roll. The radishes have a spicy bite that goes well with the sweet carrot and refreshing cucumber.
· Egg sushi: Japanese scrambled eggs, called Oboro, are often used in vegetarian sushi. For those vegetarians who eat eggs, it is not only delicious, but a good source of protein.
Consider using some of these things as well: Some other ingredients that are commonly used in vegetarian sushi are kelp and seaweed, bamboo shoots, cabbage, edamame (green soybeans), pickled ginger, chilies or chili paste, beets and taro. There are also varieties of sushi made with fruit, such as plums or persimmons. If you are eating in a restaurant ask about their house specialties, and if you are making sushi at home, try to create your own innovative combinations.
