The White Rabbit's Meal To Go


Do you ever have one of those days where you’re rushing out the door at meal time and don’t have time to sit down to eat? You could hit the drive-thru, but you can’t really afford that. You could go hungry, but you really don’t want to do that.
If you have five minutes, you can make a dinner that will fill you up, is fairly healthy, tastes great and is portable enough to take on the road. You can make this recipe with whatever is handy and it’s sure to always taste good. And, if you have omnivorous friends, they can add a bit of meat to the mix for something equally as fast and pleasing to their taste buds as your grab-and-go treat.
These freeze well for a few weeks if they are packaged properly and reheated in the microwave, but I always prefer my food fresher. You might want to freeze a couple for those days when you don’t even have five minutes.
Be sure to always have some of those fresh fruits that come in their own packaging like apples or grapes for days like this as well. Grab the fruit and go you can hit the road with those and have little trash to dispose when you arrive at your destination (a core or a few stems are easier to toss and better for the environment when you arrive at your destination than, say, a yogurt container.
I call this The White Rabbit’s Meal because the White Rabbit in Lewis Carroll’s Through the Looking Glass is always “late, late for a very important date”.

The White Rabbit’s Meal

1 10-inch tortilla (whatever kind you
½ cup (more or less) of tomato sauce
½ cup of shredded soft cheese such as mozzarella, cheddar, Monterey Jack or pepper jack
A generous hand full of sliced mushrooms, onions, grape tomatoes, peppers and/or whatever vegetables you have on hand
· Spread the sauce on the tortilla.
· Pile on the cheese and cover with the vegetables.
· Roll up burrito style. Spray with a light coating of oil.
· Put it under the broiler for a minute or two (keep an eye on it and as soon as it is just starting to crisp up, remove it, wrap it in a napkin and go.
