Paint your plate with colorful vitamins

They say that the more colors you have in your diet, the better it is for you. Eating fruits and veggies in a rainbow of colors — red, dark green, yellow, blue, purple and orange — not only provides a feast for the eye, but mixing things up also gives us a lot of nutritional bang for our buck. Colorful fruits each have different phytonutrients that protect the plants from sunlight, soil problems, disease and extreme temperatures. In order to help protect themselves from the sun, fruits often produce chemicals with anti-inflammatory and antioxidant effects which are passed on to you when you eat them.
I’ve been told that the more colors you eat, the healthier it is, so I made a fruit salad that is as colorful as it is good.
Papayas have 10 percent of the fiber you need in your daily diet and 131 percent of the Vitamin A and 144 percent of the Vitamin C you need. One-fifth of a medium avocado has 50 calories and 20 vitamins and minerals, 76 milligrams beta-sitosterol, a natural plant sterol which is a natural way to lower your cholesterol. And, grapefruit are also high in fiber (4g) and many vitamins, including A and C.
Mixed together, these fruits make a delicious healthy salad.
Tropical Rainbow Salad
1 large avocado
1 small papaya
1 red grapefruit
Hand full of Romaine lettuce or spinach leaves
2 tablespoons of olive oil
1 tablespoon of lemon juice
Salt and black pepper to taste
· Peel the avocados and the papaya. Remove the pits and seeds.
· Cut the fruit into slices.
· Using a sharp knife, peel the grapefruit, then segment it, removing the thin membrane from each of the segments. Cut the segments in half then add to the fruit mixture.
· Wash the lettuce and break into leaves or use spinach, if you prefer.
· Place the greens on a platter and put the fruit mixture on top of them.
· Whisk the olive oil, lemon juice, salt and pepper together.
· Drizzle the dressing over the salad.
