I love to start off my morning with waffles. Plain old out of the box kind that people want you to” leggo of”, don’t do much for me. I’ll let go in an instant. I like to make my own from scratch and add all kinds of flavors and textures. Chocolate, Oatmeal raisin, Blueberry, Orange cranberry, Flax seed…
Variations on waffles are made all over the world. American waffles are usually made from a batter leavened with baking powder to make them thick and fluffy. Like me, most people serve them as a sweet breakfast food, but some people don’t limit these thick treats with deep pockets that can catch creams and sauces to just one meal. In some places, they eat fried chicken and white sauce on a waffle. Kidney stew is another popular topping.
When you are craving a waffle cone with ice cream at home, top a waffle with a scoop or two of your favorite flavor.
But for a tasty, nutritious start to your day, it’s hard to beat these crunchy flax seed waffles. (This recipe makes 6 to 8 waffles, so if you can’t eat that many at a sitting, freeze the extras in airtight plastic containers for up to three weeks…when you’re ready for another serving, just pop them in the toaster and warm them up.)
The benefits of adding flax seeds to your diet include lowering total cholesterol and LDL ("bad")cholesterol levels and lowering blood trigycerides and blood pressure. One study even suggestes that eating flax seeds regularly keeps your blood platelets from getting sticky, reducing the risk of heart attack. All that aside, they just taste good.
Flax seed waffles

2/3 cup whole wheat flour
2/3 cup white flour
4 teaspoons sugar
3 teaspoons baking powder
3 teaspoons flax seeds
¼ teaspoon salt
2 Eggs
1 cup soy milk
1 tablespoon melted butter

· Mix dry ingredients.
· Mix wet ingredients separately.
· Mix dry and wet together whisk until smooth.
· Pour batter onto the waffle iron.
· Cook the waffles until the steam coming from the waffle iron is almost gone and the waffles are golden brown
