When someone is 92, I say "Let them eat cake!"

Yesterday was my Great Aunt Frances’ 92nd birthday. She has dimentia. At times, she barely remembers her own name, but she knows a fun party when one comes to her. And, she loves her sweets.

My mother, who is 80 and who has always adhered to a strict healthy diet, insists that Frances should eat more healthful foods, but Frances has rediscovered her love for ice cream and cake.

I like to eat healthy too, but if I live to be 92 I’m going to eat chocolate cake with cookies and a big serving of ice cream every morning for breakfast. In the meantime, I’m going to save such extravagances for special parties.

This is a vegetarian dessert in the sense that it is meatless. I make no claims that it is good for you – only that it tastes great and is absolutely perfect for any occasion you may want to celebrate.

Yes, heed my mother’s advice and eat a well-balanced diet with lots of fruits and vegetables.

But you have to have to be a little bad every once in a while. And remember that when you are bad in the dieting sense, it tastes very, very good.

And, like I've said before...do it in moderation if you want to remain healthy and live long enough to enjoy such treats whenever you want them!

Devilish Cookie Cake

1cup butter, softened (don’t use margarine)

2 1/2 cups sugar

4 eggs

2 1/2 cups flour

1 cup unsweetened cocoa powder

1 teaspoon baking powder

2 teaspoon baking soda

2 teaspoon vanilla

3 cups buttermilk

1 cup chocolate frosting

20 cream filled chocolate cookies, crushed

· Preheat oven to 350 degrees

· Line a pair of 9 inch pan with non-stick paper.

· With an electric mixer, beat the softened butter with sugar until white and fluffy.

· Add one egg at a time, mix well between each egg.

· Add sifted flour, cocoa powder, baking powder, baking soda, and buttermilk, and mix until the batter is smooth.

· Transfer to cake pans and bake just until set in the middle, approximately 45 minutes. Do not over-bake! Remove from the pans and cool on wire racks.

· After the cake is cooled, frost the top of each layer. Put half the crushed cookies on each frosted layer and arrange one layer atop the other.

· Serve with a scoop of ice cream.
