Healthy food, real fast

I was rushing out the door the other day when I remembered I needed to pack a lunch to bring with me.
Five minutes. Just left overs? No, I wanted something fresh.
Think...quick!
OK, so I pulled out some left overs and some fresh veggies.
"Easy, pleasy," as one commercial spokesgecko says.
A red pepper, a yellow sqaush, a couple of green onions, a hand full of mushrooms, a few green beans and the rice, all cut into big chunks and quickly stir fried in some sesame oil.
That's it.
Good food does not have to be complicated. Sometimes, the best meals are just that simple. You can use whatever is on hand and you'll have fast food in the healthiest sense of the word.
If you don't have the exact ingredients listed here, don't worry about it. Find veggies in a variety of colors and textures and mix them together. Peas, tomatoes, red onions, zucchini, green peppers...you get the idea.
The sesame oil is the main seasoning in this particular recipe, but if you like soy sauce, sprinkle some on the top as you're mixing it all together. Don't go overboard on the spices, let the vegetables take center stage in this dish.

I made this, cleaned up and was out the door on time with this. Faster than a trip through the drive thru at the Chinese restaurant.
Fast Food Stir Fry
1/2 red pepper, roughly chopped
1/2 yellow squash, roughly chopped
2 green onions, white and some green parts, chopped into 1-inch pieces
6 button mushrooms, quartered
1/2 cup green beans
2 cups cooked rice
1 teaspoon sesame oil
Put the oil in a hot skillet and turn to make sure the entire bottom is covered.
Add the vegetables, stir and fry for 1 minute.
Add the rice, heat through.
Pack up and go.
