PB&J in a whole new way
Steve contends that peanut butter cookies should be left pure. Nothing besides peanut butter should be in those soft, melt-in-your-mouth cookies. OK. He's entitled to his opinion. I like jelly or even chocolate on my peanut butter cookies.
So far, the vote from those who have tasted the PB&J Cookies is 6-1. You decide.
Peanut butter and jelly is one of the most popular sandwiches in this country (and in Canada, Australia and the UK as well). A 2002 survey showed the average American will have eaten 1,500 of the sandwiches before graduating from high school. I thnk the number is much higher.
PB&J Cookie Bars
1/2 cup sugar
1/2 cup brown sugar, packed
1/2 cup butter, softened
1/2 cup peanut butter
1 egg
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup jelly, your choice of flavor
- Cream the butter for 2 minutes. Add the sugars, cream for 2 more minutes. Mix in the peanut butter and egg. Mix together the dry ingredients - flour, baking soda, baking powder and salt.
- Stir into the sugar butter mixture.
- Wrap dough in plastic and refrigerate at least 3 hours.
- Preheat oven to 300 degrees.
- Press half the dough into the bottom of a 9 by 13 pan that has been sprayed with cooking spray.
- Spread jelly over the bottom layer.
- Top the jelly with the rest of the peanut butter dough.
- Bake for 15 minutes.
Cool completely and cut into bars.
