Shake it like a...pineapple

My daughter Amanda was visiting from college this weekend. She loves pineapple - fresh pineapple - please and thank you. None of that canned stuff for her.
Since we already consumed our crop of one pineapple from garden this year, we purchased one at the store and sliced it up. The top of this one will be replanted and we'll have another garden fresh fruit in a couple of years.
A few chunks wouldn't fit into the container as we were putting them away (you can't eat a whole pineapple at once!), so I decided to use the "spares" to make something.
Pineapple Upside Down Cake? Nah, been there, done that. Pineapple Pizza? Whoa - overdone!
Then I remembered camping when I was a Girl Scout. One of our favorite campfire snacks was Pineapple Shake 'em Ups.
I don't think we made these up. It's kind of like the Italian Sfingi but with pineapple in it. They're surprisingly good and they're fun to make.
Amanda, a pineapple purist, was hesitant to try the fried pineapple, but even she gave it her stamp of approval.
Give it a try. It's fun in a kid sort of way...


Pineapple Shake 'em Ups


1 cup flour
3 tablespoons sugar
6 teaspoons baking powder
1 cup pinepple chunks
Oil (for frying)
1/3 cup powdered sugar
1 teaspoon cinnamon
Paper bag

  • Mix flour, sugar, and baking powder in the paper bag.
  • Drop the pineapple chunks into the mixture.
  • Shake 'em up.
  • Drop the pieces into hot, deep oil.
  • Fry until golden brown. Drain.
  • Combine powdered sugar and cinnamon.
  • Sprinkle warm Shake 'em Ups with powdered sugar and cinnamon mixture.

    Vegan.
