This bread is the tops

A friend of mine had been after me to make some bread for him, but he had been unable to decide what kind of bread he wanted.
I made the decision for him by making one basic loaf with a variety of toppings so it seemed like I was making several different kinds of bread. He was pleassed with the results, though he had a tough time choosing which bread to sample first.
Bread has always been a staple of the human diet.
In the Stone Age, people made solid cakes from stone-crushed barley and wheat. A millstone used for grinding corn has been found that is thought to be 7,500 years old.
Loaves and rolls have been found in ancient Egyptian tombs. In the British Museum's Egyptian galleries you can see actual loaves which were made and baked over 5,000 years ago. Don't try to eat those - good bread is not high in preservatives so they'd probably be a little hard...besides it's more fun to make your own.
This multi-toppinged "loaf" is really a collection of honey wheat rolls with sunflower nuts topped with sesame seeds, sunflower seeds and rosemary. The rolls are packed tightly in a springform pan and popped out. They can be presented as a full loaf or pulled apart into separate rolls. Either way, they are delicious.
Serve these on Thanksgiving so everyone can get the bread they want.
Crown Loaf
4 cups whole wheat flour
2 teaspoons salt
1 package (2 1/4 teaspoons) yeast
2 tablespoons honey
2 tablespoons+1 teaspoon oil
3/4 cup sunflower nuts
2 tablespoons sesame seeds
2 tablespoons poppy seeds
1 tablespoon dried rosemary
  • Put the flour, salt and yeast into a large bowl.
  • Mix the yeast, honey and oil in a cup and then mix into the bowl with the other ingredients.
  • Knead for 10 minutes and put in a greased bowl for an hour and a half.
  • Roll the sunflower nuts into the dough and roll into a loaf.
  • Cut into eight parts and roll into balls.
  • Roll three of the balls in poppy seeds, two into sesame seeds and one in the rosemary.
  • Put into a greased springform pan and let rise for 35 minutes.
  • Bake for 10 minutes in a 450 degree oven. Lower the temperature to 400 degrees and bake for another 20 minutes.
