Finger food pie


With holiday parties coming up, you'll want to have plenty of snack foods on hand.
Pies are one of my favorite things to eat, but they don't make for very good finger food. You know, you need to have a fork and who wants to walk around a party with a fork?
Sweet potato pie is an all-time favorite of many at the Southern Christmas table. But, how can we have sweet potato pie while we're mingling at a party. It just can't happen.
Or, can it?
Inspired by the fruit pies at fast food restaurants, I decided to make little hand held sweet potato pies that are tasty, neat and quite portable. Can it get any better than that?
Portable Sweet Potato Pie
1 pre-made, unbaked pie shell
2 medium sweet  potatoes
1/2 cup butter, softened
1 cup white sugar
1/2 cup milk
2 eggs
1/2 teaspoon each ground nutmeg and cinnamon
1 teaspoon vanilla
Boil sweet potato whole in skin until soft/
Run cold water over the sweet potato, and remove the skin.
Mash the sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth.
Roll out the crust and cut it into four equal circles.
Put a quarter of the filling into each circle.
Fold the circles in half and pinch the edges closed. Poke holes in each pie with a fork.
Bake at 350 degrees for 35 to 40 minutes or until golden brown.
