Having a tangerine dream? Try this sweet treat.


I had a few tangerines left over from a recipe the other day. It was warm (I live in Florida, you must recall) and I wanted something cool to eat.
Orange sherbet has always been a favorite, but I thought tangerines might work as well.  After all, tangerines are a kind of orange. Tangerines are used to flavor all manner of things from ice cream to sauces for vegetables.
Did you know that one average tangerine yields about 1/4 cup juice and that the zest from 1 tangerine will yield about 1 teaspoon when grated?
Tangerines are a very sweet orange and they have a very strong scent. Because the smell is so strong, the taste is also strong. While oranges have had all fame and glory in the citrus industry, tangerines are actually the sweeter fruit.
Go figure!
The tangerine sherbet was delicious...not the sweet-tart of the orange sherbet, something a little difference.
Sherbet is easy to make. It takes a little patience because you have to do a little freezing and stirring and more freezing and more stirring to give it just the right texture. But, it's not much more than that.

Tangerine Dream
1 cup sugar
3 cups boiling water
3/4 cup tangerine (or lemon, orange or lime) juice
1 cup soy milk
1 tablespoon grated rind
  • Dissolve the sugar in the boiling water
  • Add the soy milk, juice and rind. Stir until combined.
  • Pour into a container and put in the freezer.
  • Stir every hour or so to break up the crystals.
  • When it's frozen scoop into bowls and enjoy.
Vegan.
