We had an informal gathering at our house the other day of people who are working on a project. It was an early afternoon event. Of course, I felt compelled to feed everyone something...it would be rude not to do so, wouldn't it?
It was too late for breakfast, too early for lunch, so I made some appetizers and a cake.
The most popular was the Cinnamon Streusel Coffee Cake. It takes a bit of doing to get this cake together, but it is well worth the effort.
Streusel is a German word that means "something scattered or sprinkled". The streusel topping is just strewn willy-nilly over the top of the cake to make an irregularly-textured sweet and crunchy topping.
This cake is basically made up of three parts: the topping, the cake and the filling. Each section has its own texture and taste. They all mix together to form something delicious.
As the name suggests, this would be a great treat with a good cup of coffee. But don't limit yourself...make it any time you want a sweet treat.
My grandfather used to slice this cake up, toast the pieces and slather butter on them for an occasional  not-so-healthy breakfast treat. I know some people who like to eat it fresh from the oven with a glob of vanilla ice cream. Both of those options are exceptionally good. I prefer it just plain...it has enough going on to stand on its own.
This recipe will take you a couple of hours, start to finish, so don't set out to make this when you're in a hurry. And eat it slowly too - you'll want to savor every bite.
Cinnamon Streusel Coffee Cake
Topping
1 1/4 cups granulated sugar
1 1/2 cups flour
1 tablespoon ground cinnamon
6 tablespoons butter, melted
Filling
1 cup brown sugar
1 1/2 tablespoons cinnamon
Cake
3/4 cup butter
1 teaspoon salt
1 1/2 cups sugar
1/3 cup brown sugar
2 1/2 teaspoons baking powder
2 teaspoons vanilla
3 eggs
3/4 cup sour cream or plain yogurt
1 1/4 cups milk
3 3/4 cups flour
  • Topping: Sift together the sugar, salt, flour, and cinnamon. Add the melted butter, stirring until it's well combined. Set aside.
  • Filling : Mix together the brown sugar and cinnamon. Set aside.
  • Cake: In a large bowl, beat together the butter, salt, sugars, baking powder, and vanilla until combined and smooth. Add the eggs one at a time, beating well after each addition.
  • In a separate bowl, whisk together the sour cream or yogurt and milk. Add the flour to the butter mixture alternately with the milk/sour cream mixture, beating gently to combine.
  • Spread half the batter into the prepared pan, spreading all the way to the edges. Sprinkle the filling evenly over the batter and spread the rest of the batter atop the filling. Use a table knife to gently swirl the filling into the batter.
  • Sprinkle the topping over the batter in the pan.
  • Bake at 350 degrees  for about 50 to 60 minutes.
