Easy brunch snack for Genevieve's 20th


Today is my daughter Genevieve's 20th birthday.
She's like me in that she loves to cook and loves to eat. Like me, she is also gets a kick out of inventing new dishes.
For a special day brunch, we tried to come up with a healthy, tasty dish that would satisfy my vegetarian guidelines and would taste great to others. What we came up with may not be low fat, but it is healthy and tastes great.
Avocados and bagels? Who would think those two things would go together.
Bagels used to be thought of as "Jewish" food, because traditionally many observant Jewish families would make bagels on Saturday evenings at the conclusion of the Sabbath. Because of Sabbath restrictions, they were not permitted to cook during the period of the Sabbath and, compared with other types of bread, bagels could be baked very quickly as soon as it ended.
These days, however, everyone eats bagels...because they're fast and delicous.
So, this brunch dish is light and delicious and so easy to make. Perfect for any occasion.
Genevieve's Brunch Avocado Bagels
1 bagel
1 tablespoon of margarine
dash of hot sauce
1/8 teaspoon each of pepper, oregano, rosemary, thyme and basil
1/2 teaspoon of kosher salt
1/2 of an avocado
1/4 of a tomato
Toast the bagel.
Mix the margarine with the pepper, oregano, rosemary, thyme and basil. Spread the butter mixture on the bagel.
Slice the avocado thinly and spread the slices out over the buttered bagel.
Chop the tomato coarsely and spread it over the avocado.
Sprinkle with salt.

Vegetarian.
