Fast food - Simple, styled asparagus


I met  a woman at a meeting the other day who had found that the metals in her body were at alarmingly high levels. The amalgam fillings in her teeth were poisoning her body, she said.
On the advice of a holistic practitioner, she was eating a lot of greens to purge her system of the metals (while also having the fillings replaced). The best foods for taking the metals from her body, she was told, were avocados and asparagus.
Since asparagus was on sale at the grocery, I decided to make some with this lady in mind. With her, it's not a matter of something she always wants to eat, it's something she has to eat. So quick and simple is probably best.
So I wanted to try to start with was something extremely simple. Over the course of the Spring, as the asparagus gets nicer, I'll make more complex things.
Simple is better sometimes. This is really quick. If you take too long, it'll be less tasty so hop to it and make something real good, real fast...
I love the cool new bowl I got the other day. The small cuts of asparagus looked really good in it.
Now, I'm inspired to make some Oriental-inspired dishes, just to show them off in this bowl! Stay tuned.
Fast Food - Asparagus
1 bunch of asparagus
2 tablespoons of  olive oil
2 tablespoons of Parmesan cheese
1 teaspoon of lemon zest
Salt and pepper to taste
  • Rinse the asparagus to get rid of any sandy residue. Slice off the woody, white stems and cut them into sections that are about an inch or two long. (I discovered that if you cut the pieces diagonally, they stay together a little better.)
  • Fill a medium saucepan about halfway up the side with water and bring it to a boil.
  • Add the asparagus and turn the heat down to low. Simmer the asparagus for exactly two minutes...set a timer...if it goes too long, the veggies will get mushy. You don NOT want mushy asparagus.
  • Drain off  the hot water and toss the asparagus in a bowl that has the olive oil, the cheese  and the lemon rind in it.
  • Add the salt and pepper to your own taste.
  • Let it cool down to room temperature before you eat it.
