Real men will like this quiche

My friend Pat sent me a suggestion of a low fat quiche that sounded so good that I just had to try it.
The recipe called for all fat-free versions of the ingredients, but I think a little fat makes a quiche taste a little better so I left some of the diet versions of these ingredients out. You can make a more diet friendly verion by going back to the low-calorie versions of these ingredients.
Although quiche is now a classic dish of French cuisine, quiche actually originated in Germany, in the medieval kingdom of Lothringen, under German rule, and which the French later renamed Lorraine. The word ‘quiche’ is from the German ‘Kuchen’, meaning cake.
This is nothing like what we think of as cake...it's more like a custard, but if you're cutting calories, this would certainly be a good alternative to a gooey chocolate cake.
Back when I was a teen there was a book called "Real Men Don't Eat Quiche", but this is a great dish for those guys who want a hearty dish with few dishes to clean up. The idea that quiche was too foo-foo for men never really took hold because it's something too good for real men to pass up.
Try both the low fat and the regular versions of this "cake" and see which you like better.
Easy Cheesy Quiche
1/2 cup fat-free milk

2 tablespoons flour
3/4 cup refrigerated egg product
2 ounces cream cheese, cut up
1 cup cottage cheese
1 cup shredded Monterey Jack or Cheddar cheese
1/2 teaspoon sugar
3 scallions, white and green parts, chopped fine
1/8 teaspoon pepper
1/2 tablespoon basil or oregano
  • Preheat the oven to 350 degrees.
  • In a medium bowl, whisk the milk into the flour until it's smooth.
  • Mix in the egg, the cottage cheese, and the cream cheese.
  • Stir in the Jack (or Cheddar) cheese, the sugar, the scallions and the pepper.
  • Pour the mixture into a prepared 9-inch pie plate.
  • Bake for 45 to 50 minutes or until the quiche is puffed and a pretty golden brown (Test for doneness by sticking a knife in the center of the pie and seeing if comes out clean.
  • If you want, throw some left over salsa on top for some added color.
