Sometimes you have to find that balance of what tastes good and what's good for you...


I've been eating a lot of cakes and cookies lately because I thought that would help give me energy to do all the things I need to do to help with Steve's campaign.
But let's be honest, all that sugar gives you short bursts of energy, but does nothing to keep you going for the long haul. So, I had to revamp the old diet again.
A little slice of orange bread or sweet potato pie is fine for dessert, but it can not be the whole meal. I decided that a big serving of vegetables and fruit was the key to getting back on track. There was a bunch or two of spinach and a basket of fresh-picked strawberries in the fridge and a little container of almonds in the pantry. Certainly that could be combined to make something good and good for me....
Reading the labels of store-bought salad dressings, there were too many ingredients that I couldn't pronounce and quite a bit more sugar than I would have expected, so I decided to make my own. It's not that hard and you end up with exactlly what you want that way.
If you have a favorite sweet-vinegary dressing that you like from your grocery shelf then, by all means, use that...this just worked out better for me.
This is a fun salad because it has vegetables, fruit and the crunchy almonds. All good things that taste great.
Spinach Strawberry Crunch Salad
3 cups fresh baby spinach

1/2 cup sliced fresh strawberries
1/4 cup sliced almonds (honey roasted ones would be good here, if you have them)
1 tablespoon cider vinegar
1 tablespoon honey
1 1/2 teaspoons sugar
  • In a large bowl, combine the spinach, the strawberries and the almonds.
  • In a jar with a tight-fitting lid, combine the vinegar,the  honey and the sugar. Shake well.
  • Drizzle over the salad and toss to coat all the veggies, fruit and nuts. Serve immediately. (If you set it aside for too long, it'll get a bit mushy.)
