You don't need chicken to make great "wings"


When one of our omnivorous friends heard that I was having a party for fans of Vegetarian On A Budget on Facebook, she was excited.
"Hey, can you make some of your spicy chicken wings?" she asked. "I love those things."
"Uh...this is a vegetarian party."
"Oh yeah. Duh."
But - duh - why not make chicken wings without the chicken. It's the sauce that everyone raves about anyhow.
Use tofu in place of the chicken. Marinate it in the same sauce and fry, marinate and broil.
It's absolutely delicious. (I used to love chicken wings before I began eating more consciously so I know my wing sauces!)
You don't need meat to have great "wings". These things even look like chunks of chicken, so your friends might not know they are not eating chicken unless you tell them. (I always give full disclosure in such matters and I would hope that others would disclose the presence of meat when they are serving me a dish. We all deserve to have our food choices honored.)
Spicy Sweet Tofu Wings
1/3 cup of chopped onion
3 cloves of  garlic
1/3 cup of  brown sugar
1 cup of white vinegar
1 stick of butter
4 tablespoons of hot pepper sauce
1/4 cup of lemon juice
1 teaspoon of honey
1/4 cup of ketchup
16 ounces of tofu, drained and wrapped in napkins in order to absorb as much liquid as possible
  • Place butter stick on a pan over a medium flame so that it melts. Add onion, garlic, tomato and the whole bottle of  hot pepper sauce.
  • Let all cook for about five minutes, stirring occasionally. Remove from the heat.
    Blend in a blender until smooth.
  • Add the lemon juice, honey and ketchup, and stir until smooth. Pour back into the pan where you melted the butter, and let it simmer for a good 20 minutes.
  • Remove from heat and cool.
  • Cut the tofu into 1/4 inch slices.
  • Soak the tofu in the sauce for an hour, turning from time to time.
  • Fry the slices over high heat for three minutes or until it just starts to get a bit bro
  • Remove from the pan and return to the sauce. Soak it in  the sauce again for about half and hour.
  • Spray a cake pan with oil and place the slices in the pan.
  • Broil on high for 7 minutes on one side, flip and broil for 5 minutes on the other side.
