Do you believe in magic?

I was at a street  festival the other day. There were artisans and crafters among the booths. One woman was selling hand carved bowls, ceramic plates, spoons and other utensils.
She couldn't sell the bowls, of course, unless she had food on them to show off how lovely would look when they were  on your table.
She had some little fresh breads with a creamy dill sauce, some lettuce wraps and some little meat pies, which I didn't try. She had a couple of cream puffs and an eclaire and some cookies on the different plates. But on one of the plates was a beautiful cobbler.
"Oh that," she said, when I asked for the recipe. "I threw that together this morning because I needed one more thing, but it's so simple to make."
She scribbled the recipe on the back of a brochure and handed it to me, with the warning that when i made the cobbler something magical would happen. I thought she meant it would make someone very happy becuase it would be so good.
What the heck, magic or not, I really liked the cobbler so I set out to make my own. The type of fruit didn't matter, she said, so I used the nectarines I had on hand, but  you could use any sort of fruit you have...even canned fruit, if you drain it of the syrupy stuff.
Magic Cobbler
1/2 cup of  butter
1 cup of flour
11/2 teaspoons of baking powder
1 cup of sugar, plus a bit more
3/4 cup of milk
1 1/2 cups of nectarines, cut up into bite sized pieces
  • Preheat oven to 350 degrees.
  • Melt the butter in a 9 by 13 inch pan.
  • Combine flour, baking powder and sugar. Mix in milk.
  • Pour mixture over butter in pan. Do not stir.
  • Plop the fruit on top of this batter.
  • Sprinkle with a little sugar. Bake for 30 minutes.
  • When you take the cobbler out of the oven, the crust will be on the top...like magic!
