Go on a scavenger hunt in the kitchen for this salad

I was visiting a friend recently and was scouring the kitchen (this is one of those mi casa es su casa sort of friends, digging through the cabinets was OK) for some sort of breakfast foods when I came across a frozen food item which I believe may have raised my cholesterol level just by being in its presence. It was a “skillet meal” to which one was instructed to add a half dozen eggs and fry.
In the bag was about a pound of pork sausage, a half pound of potatoes, some random slices of green, red and yellow peppers and freeze dried cheese that was equal to or greater than the amount of sausage. Of course this is what my sweetie chose for breakfast. I continue my search.
When you’re in someone else’s home, you are limited to their grocery selections when making meal and since the friend is a devout carnivore, I held out little hope of a healthy meal. I assumed I would never find a vegan choice, but a vegetarian one was a must. One never knows what one can create in the face of such a challenge, however.
Looking through the cabinets and the fridge, I was surprised to find quite a bit of fresh and dried fruits, as well as some nuts and some brown rice in an oriental take out box, so I knew I would be able to make a meal. Here’s an always safe recipe for one of those mornings when you just don’t know what to have.
This one would probably be a good as a side salad with any meal.
Scavenger Hunt Fruit and Veggie Salad
2 cups of white beans
1 cup of brown rice
3/4 cups of pomegranate
1/2 cup of dried cranberries
2 tangerines, peeled and cut up
A few hand fulls of slivered almonds and cut up
1/2 cup of chopped scallions
Ripped mint leaves
Salt, to taste
Dressing
4 tablespoons of Orange Juice 
3 tablespoons of sesame oil
1/2 teaspoon for sugar
2 tablespoons fresh mint, chopped and mushed
Salt and red pepper flakes to taste
  • Combine the rice and all the other fruits and nuts. Toss well.
  • Whisk all the ingredients of the vinaigrette.
  • Pour it over the rice salad and toss.
Vegan.
