Real simple and real good

While chocolate cake is my absolute favorite and I like an exotic cake, with an unusual flavor or ingredient,  from time to time.
But some days, I just like a plain little vanilla cake. Something moist and tasty, but nothing exciting. Some days you just don't need any more excitement than life already dishes out.
Some days in the campaign office, we are rushing around doing so many different things. We are always busy, but we love to eat. Days like this call for a snack that's simple.
This vanilla cake is sweet and moist. You can't do better than this.
Not only that, it's so easy to make that you can whip it together first thing in the morning and have it in the office ready for to eat when the crew arrives.
If you don't want a full cake, you can pour the batter into cupcake tins and have a dozen little cakes  to enjoy a little at a time
Simple Vanilla Cake
1/2 cup softened butter
3/4 to 1 cup sugar
2 eggs
2 tsp. vanilla extract
1-1/2 cups all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
2/3 cup cold milk
  • Preheat oven to 350 degrees.
  • Cream butter and sugar.
  • Add eggs one at a time, beating after each addition.
  • Stir in vanilla.
  • In a separate bowl, stir together all dry ingredients.
  • Add to butter mixture; stir in milk.
  • Pour into a 9 by 13 inch cake pan, 12 small or 6 large cupcake tins
  • Bake for 22 to 30 minutes.
