When the moon's in your eye like a big pizza pie...

Everyone loves pizza. Oooey, gooey with cheese and loaded with vegetables in a delicious tomato sauce.
And the crust...mmmm-mmmm. What better combinaton of flavors could there possibly be?
Research has shown that pizza is the most healthy of the junk foods you can eat.
Now, no one is going to tell me pizza, with all that grease and cheese is a health food, but it has to be better for you than the other junk food options.
Pizza, however, can get a little boring. A couple of slices for dinner with a salad. Then, cold the next morning for breakfast. And, maybe, packed into your cooler for an easy lunch. So by the time you get to dinner again, you probably don't want to see another slice for a very long time.
If you're craving the taste still, however, try making a slightly different version of America's favorite pie.
Double Crusted Pizza Pie
Dough for two pie crusts (or get a couple of pre-made crusts from your grocer's freezer)
1 cup of tomato sauce
1/2 cup of  mushrooms, chopped
1/2 cup of green peppers, chopped
1/2 of a medium onion, chopped
a hand full of spinach, ripped into small pieces
1 cup of mozzarella cheese, grated
1/2 cup of ricotta cheese
Bake one of the crusts on a cookie sheet at 400 degrees for 5 minutes (just until it begins to change color).
Brush the tomato sauce over the crust within an inch of the edge all the way around.
Spread the veggies around over the sauce.
Plop the ricotta by teaspoon fulls all the way around the pie.
Top everything with a layer of the mozzarella.
Put the other crust over the pie and pinch the edges down with your fingers. Slit the top in several places with a knife. Spray with some oil.
Bake at 400 degrees for 15 minutes or until the whole top is a beautiful golden brown.
