Wrap it up

Sometimes a sandwich is just too heavy.
You want to have some sandwich fillings, but the bread is more than you really want to have with your meal. There is an alternative.
Wrap up your lunch in a tortilla and go.
I've been eating wraps for years...long before every fast food places offered them. Pizza wraps, taco wraps, burger wraps...every kind of wrap.
But, of course, you can't drive up to most places and get a good-for-you wrap like this one.
I like wraps because they are light. I don't want pizza or other heavy stuff in my wrap, but that's just me. Don't get me wrong - I like calzones and pizza rolls and such, but I when I want a wrap, I want something light.
Go through your pantry and fridge and see what veggies you have available and just wrap them up for a quick, delicious snack.

Vegetable Wrap
1 tablespoon of  spreadable cream cheese (take a block of cream cheese and mix it with a hand mixer until smooth and spreadable)
1 large tortilla
2 tablespoons of  shredded carrots
2 tablespoons of  green pepper
2 tablespoons of chopped red onion
1/4 cup of shredded Monterey Jack or Pepper Jack cheese
1/4 avocado, peeled and sliced
1/4 cup of spinach leaves
1/4 cup of your choice of sprouts
salt and pepper to taste
Spread cream cheese over the tortilla to within 1/2 inch  of the edges.
Arrange all the filling ingredients in a row along the center one-third of the tortilla. Sprinkle with salt and pepper to taste.
Roll the tortilla up as tightly as possible to enclose the filling without tearing the tortilla. Cut in half crosswise.
