Don't sell this recipe short....

When I was first learning to cook, I don't think I would have stuck with it had it not been for baking mix...you know, the stuff that you mix with water or milk to make biscuits quickly.
I made everything from biscuits to desserts with that simple mix. Pie crusts were easy. Drop biscuits and fluffy cut biscuits were always perfect.
It was so easy.
As I learned to make my own recipes from scratch, I weaned myself off the mix and eventually stopped buying it all together.
But, as the campaign has been heating up, I have less time in the kitchen. So, for  little time, I have some baking mix in the house.
And, back near my hometown of Tampa FL, the annual Strawberry Festival was recently celebrated in Plant City. I remember that festival from when I was a kid. Fresh strawberries, strawberry cookies, strawberry ice cream and, of course, strawberry shortcake.
Shortcake can be soft and fluffy or crunchier and cookie-like. That's the kind I prefer and that's the kind that works best when you are using the biscuit mix. It's sweet and crunchy like a cookie topped with fresh fruit and sweet whipped cream.

Super Strawberry Shortcake
2 1/3 cups of baking mix

3 tablespoons of  butter, melted
1/2 cuppf  milk
3 tablespoons of sugar
  • Heat oven to 425 degrees.
  • Stir the baking mix, the melted butter, the milk, and  the sugar in a mixing bowl until a soft dough forms.
  • Drop a couple of tablespoons of the dough together in a big blob onto a greased cookie sheet.
  • Bake for about 12 minutes or until golden brown.
Meanwhile...make the strawberry topping

3 baskets of fresh strawberries

1/2 cup of sugar
Whipped cream
  • Remove the stems from the strawberries. Slice into thin slices.
  • Put the berries into a large bowl and add 1/4 cup to 1/2 cup of sugar (depending on how sweet the strawberries are to begin with) and add the sugar to the strawberries.
  • Set aside at room temperature to macerate (which means that the sugar will soften the strawberries and help release their juices).
  • After the strawberries have been sitting for 20 minutes or so, mash them softly to get a bit more juice out of them.
  • Slice one of the biscuits in half and ladle strawberries over the biscuit.
  • Put a bit or more of whipped cream on top and serve.
