A great way to start your day...


I remember a friend of mine used to make all kinds of muffins with cereals. As a joke, I once used Fruit Loops to make muffins, which turned out to be a colorful mess. 
Bran cereals make the best muffins and the one with the two scoops of raisins make fine muffins.
Bran is good for you on many levels. Not only will it help lower your cholesterol levels, but researchers say it can also lower insulin requirements for diabetic patients.
Raisins are cholesterol-free, low in sodium, high in fiber and totally fat-free. Apart from that, they contain a lot of vitamins and minerals, making their nutritional value very high. Raisins are the best source of quick energy, as they contain 70 percent pure fructose, which gets digested by the body easily and gives instant energy. 
Needless to say, these muffins are good for you, but they are also delicious, easy and inexpensive to make. This a great way to start your day.

Bran Muffins with Raisins
1 (15 oz.) box of bran cereal with raisins
2 1/2 cups of sugar
5 cups of flour
5 teaspoons of soda
2 teaspoons of salt
4 beaten eggs
1 cup of oil
1 quart of buttermilk (add a teaspoon of vinegar to plain milk and let it sit for 5 minutes)

  • Mix the dry ingredients together, add the beaten eggs and the buttermilk and the oil.
  • Fill muffin tins almost to top.
  • Bake at 400 degrees for 15 minutes. (Don't overbake them - they'll dry out.)
