I have always thought of fudge as a holiday snack...usually I make up bunches of it for Christmas.
The other day, however, I was craving chocolate even more than I usually do so I decided that holiday or not, everyone in the house was going to enjoy an elegant piece of peppermint studded fudge...and then I could have the rest of the pan for myself.
Several pounds gained later and a sugar rush that lasted for a few hours, I was spinning back to reality and I have had a diminished craving for chocolate the last few days. Those who had the simple serving as a conclusion to their meal did not suffer the same consequences.
Life Lesson of the Day: Enjoy your fudge in small portions and you'll enjoy it longer.
This recipe is so simple that you can make it any time the chocolate craving moster rears its ugly head. It takes just a few minutes to put together and a bit a patience while it cools down in the fridge. If you eat it in reasonable portions, however, it will last until you make another batch so you won't run out!
Enjoy this any time - there's no rule that says fudge is a holiday only treat.
Simple Every Day Fudge
1 packge of  semi-sweet chocolate chips

1 14 ounce can of sweetened condensed milk
Dash of salt
1 1/2 teaspoons of  vanilla
A few spoonfuls of crushed peppermint candies
  • In a heavy saucepan over low heat  or in the top of a double boiler over not-quite boiling water (my preference) melt the chocolate chips with the sweetened condensed milk and salt.
  • Remove the chocolate mixture from the heat and stir in the vanilla.
  • Spread into a well-greased pan.
  • Sprinkle with crushed candies.
  • Chill  for two hours or until firm.
