No heavy red sauce to spoil the flavor of this pizza

The only pizza I ever had growing up had thick red sauce that overpowered just about any toppings that were on it.
The closest thing to pizza we had in my Sicilian home growing up was a thick bread, slathered in that red sauce and piled up with leftovers from the week. This was a Friday night treat.
Eh. It was OK, but I wouldn't go out of my way to get it. And, remember, I was in my late 20s before I learned how to cook.
So, unlike most Americans, pizza was never a real part of my diet. Until I discovered pizza with white sauce.
Pizza Bianca.
A delicate white sauce and some vegetables (my personal favorite is spinach) and a couple of different cheeses and now you have a pizza pie I can sink my teeth into.
Here's a simple recipe that uses frozen bread dough...you don't have to knead or wait or pull or fuss. And it's way better than any take out pizza. Not to mention that you can make this for yourself at 2 in the morning when no one is delivering.
Pizza Bianca with Spinach
1 loaf frozen bread dough, thawed
2 1/2 tablespoons of  olive oil
2 tablespoons of cornstarch
2 cups of  milk
A dash of  salt
1 teaspoon of white  pepper
3 cloves of  garlic, minced
1 teaspoon of onion powder
1 teaspoon of  oregano
2 tablespoons of Parmesan cheese
1/2 cup of ricotta cheese
1 cup of  shredded mozzarella
2 cups of fresh baby spinach, stems removed
  • Roll bread dough on lightly floured surface to fit a pizza pan or baking sheet that has been sprayed with olive oil
  • Pinch the edges of dough into a rim all the way around.
  • In a  medium saucepan saute the garlic until it is soft.
  • Blend in the cornstarch, salt, pepper and spices. Gradually add the milk and Parmesan cheese. Heat to boiling, stirring constantly for about 2 minutes.
  • Let the sauce cool slightly.
  • Brush surface of the dough with of olive oil and spread the white sauce over the crust. Sprinkle mozzarella over the sauce. Spoon the ricotta in small amounts all around the surface of the pizza
  • Bake at 425 degrees for 15 to 20  minutes.
  • Pull it out of the oven and cover the surface with spinach leaves. Return it to the oven and bake for another 2 minutes.
