Pasta Pomodoro: Good and good for you

After 8 hours of going door-to-door, I am sometimes not in the mood to do any serious cooking.
I still want to eat well, so I choose my ingredients carefully and try to put together that is both good and good for me.
The tomato offers all kinds of health benefits. Tomatoes are native to South America. Among the benefits of tomatoes are to the heart.
In addition, these fruits contain lycopene, one of the most powerful natural antioxidants. In some studies lycopene, especially in cooked tomatoes, has been found to help prevent prostate cancer but other research contradicts this claim.
 Lycopene has also been shown to improve the skin's ability to protect against harmful UV rays.
Tomato consumption has been associated with decreased risk of breast cancer, head and neck cancers and might be strongly protective against neurodegenerative diseases
Pasta Pomodoro may sound fancy, but it's really  simple dish that can be put together quickly. So, if you've had a long day, throw this together and sit back and relax with a tasty dish that is full of health benefits.
Pasta Pomodoro
2 garlic cloves, finely chopped

2 pounds of   tomatoes, medium
1/4 cup of basil leaves, finely chopped
1/4 cup extra virgin olive oil
4 ounces of Parmesan cheese
12 ounces of Angel Hair pasta, cooked
Salt and pepper, to taste
  • Heat some olive oil over high heat and add garlic; saute quickly (less than a minute). 
  • Add the tomatoes, the salt, and the pepper.
  • Saute for another half minute or so, stirring constantly. Then remove from the heat.
  • Stir in the cooked pasta and chopped basil and toss.
  • Add the Parmesan cheese and toss it all again..

Vegetarian.
