Plantains...spiced up a little

The last week or so, I've had plantains in a couple of different ways, but they've all been fried and all pretty much unseasoned except with just a pinch of salt.
Don't get me wrong. I love plantains. I love them just about any way you cook them. But I was craving something a little different. Something with a little more punch.
And I didn't want them fried.
So, when I got home from a long afternoon of going door-to-door for the campaign, I cut up a not-quite-ripe plantain, mixed up some spices and cut up some onions and put together a delicious dinner that I had with a side of rice and some broccoli.
Simple and good. What more would you want from a meal at the end of a hard day?
Baked Spiced Plantains
1 not-quite-ripe plantain
1/4 onion, chopped finely
1 tablespoon of butter
1 teaspoon of sugar
1 tablespoon of pepper

  • Pile all the ingredients in a greased baking dish.

  • Put in a preheated 350 degree oven.

  • Bake for 30 minutes.

  • Stir the mixture and put it back in the oven for another 15 minutes.

Vegetarian.
