These are the best butterscotch treats...bar none

We had a late morning coffee meeting at our house yesterday. I wanted to make some sort of sweet to go with our coffee, but crumb cake and cinnamon rolls have been done to death at our meetings.
I decided to try something a little different.
So, I pulled down some cookboks to find  a recipe that was a little bit out of the norm for us. I stumbled across a recipe for Butterscotch Bars that called for the butterscotch to be made from scratch. Frankly, I didn't have the patience for that while I was number crunching for the meeting in my head. I wanted something that was a little easier to make that would still allow me to come in within my budget.
Instead of cooking up the brown sugar, vanilla, butter and corn syrup, I just used the plain old butterscotch morsels usually reserved for cookie making. They are just the right recipe plus they melt up nicely for these bars. With a recipe like this there's not much point in making everything from scratch because these are still not "fresh" ingredients.
Besides, using the chips is cheaper than stirring and melting.
So these quick and easy bars were quite a hit with the coffee and gave us enough of a sugar rush to move us through the meeting.
Simple Butterscotch Bars
1 package of butterscotch morsels
1/3 cup butter
2 cups of graham cracker crumbs
1 package of  cream cheese, softened
1  can of sweetened condensed milk
1 egg
1 teaspoon of  vanilla
  • Preheat the oven to 350 degrees.
  • Grease a 13 by 9 baking pan and set it aside. In medium saucepan melt morsels and butter over low heat, stirring often. Stir in crumbs and nuts. Press half of mixture firmly onto bottom of prepared pan.
  • In large mixer bowl with electric mixer on medium, beat the cream cheese until it's fluffy. Beat in the condensed milk, the egg, and the vanilla until it's smooth.
  • Pour over the crumb mixture in the pan.
  • Sprinkle the remaining crumb mixture on top.
  • Bake for 30 minutes.
  • Cool completely on a wire rack. Refrigerate any leftovers.
