Fresh and ready in no time

I got so wrapped up in the duties of campaign treasurer yesterday (the first quarter numbers are due soon) that I didn't even post a recipe on this blog...for the first time since we started on this adventure.
Sorry to those of you who are looking for something new every day. I'll try not to let that happen again.
Today was a bit hectic as well, so I was looking for something super easy and borderline healthy to finish off the day. I went to some of my old reliable favorites and threw together a simple dish that required little cooking and just a bit of preparation.
This is a colorful, flavorful dish that would be spectacular at a dinner party, served with a crisp salad, some crusty bread and, maybe, a nice wine. But even if you're having dinner at your desk, this is a dish that will perk you up and prepare you for the work ahead.
It takes less than 20 minutes from first chop to the table, but it's fresh and tasty...not like a boxed meal that would take that long to prepare.
Most of these items are already in your fridge or your cabinets so you could go make this right now.

Super Easy Pasta Primavera
2 cups of small shell pasta
1 cup of spinach, chopped
1 cup of grape tomatoes, cut in half
1/2 cup of roasted red pepper, chopped
1/4 cup of prepared Italian dressing
1/2 cup feta cheese, crumbled
Salt and Pepper, to taste
  • Cook the pasta as directed on the package and drain.
  • Toss the hot pasta with the tomatoes, the spinach, the peppers and the salad dressing.
  • Season with salt and pepper to taste.
  • Sprinkle with the feta cheese.
Vegetarian.
