Quick, yet mindful meal: fast food black beans

In a hurry again, the other day, I had about 10 minutes to fix myself a hot meal and get out the door.
Eating on the run is a regular part of my diet and that of most Americans. Many people will jump in their cars and go through the drive through and grab whatever random food strikes their fancy when they get there, According to a recent study, more than a quarter of the US population eats at a fast food restautant every day. The study further noted that the average American child will recognize the "Golden Arches" before they are able to recognize their own name.
We are obsessed with fast food.
For those of us who try to think about the things we put into our bodies, we can easily shift the emphasis to the fast part and still make sure that what we are eating is food...real food. But we can still put it together fast.
To that end, I made a spicy black bean mix that had me out the door on time.
Fast Food Black Beans
1 can of black beans, drained and rinsed
2 ounces of cheddar cheese, grated
1 tomato, finely chopped
1/2 of a green pepper, finely chopped
1 jalapeno pepper, seeds and membranes discarded, finely chopped
1/4 of an onion finely chopped
  • Mix all the ingredients in a bowl.
  • Microwave on high for 1 minute.
  • Stir and microwave for anothe rminute.

Vegetarian.
