Spicy spuds for breakfast

Who says breakfast potatoes have to be boring?
Not I!
I usually avoid potatoes at breakfast when I dine out because a bunch of fried potatoes dusted with salt (and -if I'm lucky - a bit of pepper) is just plain dull. If that's what I wanted, I'd have ordered fries.
I want a lot more from my spuds.
If I'm making potatoes for myself, I add a whole lot more umph to my breakfast table.
It's not hard to go from mild to wild when it comes to your breakfast spuds. You can add some hot peppers and onions and just a few spices and before you know it your tastebudes will be dancing away with early  morning excitement.
Once you try these potatoes, you will be wanting to experiment more. Try jalapenos instead of poblano peppers, try scallions instead of regular onions. Add some cheese. Keep trying  different things and you won't ever yawn from boredom at the breakfast table again.
Spicy Spuds
2 large potatoes

1 medium onion
1 poblano pepper, stem seeds and membranes removed.
Olive oil for frying
1 teaspoon basil
1/2 teaspoon each of pepper and thyme
1 teaspoon rosemary
  • Pierce the potatoes several tmes and put them in the microwave on high for five to seven minutes.
  • In the meantime, cut the onion and the pepper up and fry them in the oil over medium heat until the onions are transluscent. Turn the heat to low.
  • Cut up the potatoes and throw them in the mix with the onions and the peppers.
  • Add the spices.
  • Turn the heat back up and fry it all until the potatoes are crisp on the outside.

 Vegan.
