Fresh and easy enough for a beginner

While my 20 year-old daughter, Genevieve, has been interested in cooking for some time, 18-year-old Amanda and 17-year-old Jessica are just beginning to show a real interest in the skill.
So, for their sake, I am looking for very simple recipes for them to try that are healthy as well as tasty. When you send your kids off into the world with the most basic of cooking skills, you had better make sure they can make healthy food when they do cook.
So, while they could make spaghetti with canned sauce, why not health it up by using fresh fruit and vegetables that aren't overcooked.
This is such an easy recipe that anyone can make it...even people who have barely made anything that didn't come from a box or a can can do this. And it's so good, they'll be able to impress their friends and family the first time out.
Pasta with Fresh Sauce
1 pound rotini

1/4 cup of oil
3 garlic cloves, thinly sliced
A small handful of fresh basil, chopped
2 pints of grape tomatoes
1 teaspoon of sugar
Salt and pepper, to taste
  • Cook the pasta until al dente.
  • Drain it well and keep warm.
  •  Heat the oil in a large saucepan over medium heat.
  • Add the garlic and cook for 1 minute, stirring occasionally. Add the tomatoes, basil, salt, pepper and sugar. Cook the whole thing for about 8 minutes, stirring occasionally.
  • Pour over the pasta and serve.

Vegan.
