Fruits n' Nuts make for a California Dream

At a small diner somewhere along the east coast of Florida last week, I had a great salad.
It was called the Californian. I guess that's because it was full of fruits and nuts...and that's what they say about California.
I've never been to the Golden State, so I don't know what it's like out there, but they are represented by one heck of a salad.
I ate the salad at the diner and went home and made another one for myself.
This so simple to make, but it tastes great. And with all the fruits, vegetables and nuts in the mix, it's good for you without tasting like it's good for you.
Delicious and so easy to throw together. You can have a colorful healthy meal in - literally -under a minute.
California Dreamin' Salad
3 cups of Hearts of Romaine
1 clove of garlic, crushed
1 Granny Smith apple, sliced into sections
1/2 cup of dried cranberries
1/2 cup of walnuts
1/2 cup of goat cheese or queso fresco
Italian dressing or Raspberry Viniagrette, to taste
  • Loosely shred the lettuce and arrange in a salad bowl that has been rubbed with the gralic clove.
  • Pile on the other ingredients (except the dressing)
  • Drizzle with the dressing of your choice

Vegetarian.
