Macho nachos are delicious for anyone...

I was once again in a hurry to get a meal on the table before we headed out the door, after canvassing and before an evening meeting the other day when I put together something that is a sort of Ital-Mex meal. It's hearty enough for a carnivore, but made for a vegetarian.
Double crispy and filled with fresh veggies and lots of cheese, these Macho Nachos (a name I came up with as a marketing ploy in an effort to sell a vegetarian meal to Steve) are a gooey mess, but they are good and pretty good for you.
This dish can go from the planning stage to your mouth in less than 20 minutes. That's nearly as fast as driving to - and through - your local fast food drive thru. Use fresh veggies and herbs and cook this up in a flash and you will be eating well as well as getting great taste. You can't say that about drive thru offerings.
Macho Nacho
4 large tortillas
2 large tomatoes, diced small
1 green pepper, diced small
1/2 onion, diced small
1 can of black beans, drained and rinsed
A generous handful of cilantro, chopped small
1/2 teaspoon each of pepper, red pepper, garlic powder
1 cup of cheddar cheese, grated
  • Turn on the broiler to let it heat up.
  • Lightly spray both sides of each of the tortillas with oil.
  • Set two of the tortillas on a cookie sheet. Pile on the other ingredients (except the other tortillas) in the order listed.
  • Top with the other tortillas
  • Broil for 3 minutes.
  • Flip and broil the other side for 3 more minutes.

Vegetarian.
