No Bake Fruit Squares
2 tablespoon of honey 2/3 cups water
2 tablespoons of lemon juice
2 1/4 cups of chopped banana
2 1/4 cups of chopped dried apricots
1/3 cup of real butter (no substitutes) chopped into small cubes1/2 cup brown sugar, firmly packed
Light brown sugar, ½ cup
1 1/4 cups of corn flake cereal
- Spray an 8-inch baking pan with oil and set aside.
- Combine the lemon juice, honey, water, dried apricots, bananas in a saucepan and bring the whole lot to a boil over medium heat and, then, turn it down.
- Simmer over low heat for 30 minutes or until the fruits are softened. Remove the mixture from the heat and allow to cool. Be careful when it's hot, because it will stick to you and burn.
- Melt the butter with the brown sugar in another pan over low heat until the sugar dissolves completely into a beautiful caramel glowing liquid. Mix the cereal into the butter nnd melted sugar.
- Press half of the cereal mixture into the prepared pan. Smooth it out.
- Spoon the fruit mixture over it, and cover with the remaining cereal mixture.
- Cool completely before cutting into squares.
