Pretty, easy and tasty...what more do you want from your breakfast?

Steve and the campaign manager were off to an early morning event today so I sent them off with bagle stuffed with eggs, sausage and cheese.
When they were on their way, I thought I might have a little something myself before setting off on my adventures for the day.
I rarely miss having meat in my diet, but the sausage texture seemed like it might be good to have for my sunrise breakfast. I had a bit of soy sausage that I'd used in a dish a few nights back so I pulled that out to add to some baked eggs. Fresh tomatoes were aslo there and I thought they might add a pretty look to the dish as well.
Baked eggs, sometimes called frittata, make a good breakfast, but you could serve them any time. You can't go wrong with a pretty and tasty dish like this.
Baked Eggs with Tomato
6 eggs

1/2 cup of soy sausage, crumbled
1/4 cup of bell pepper, chopped finely
1/4 cup of onions, chopped fnely
2 small tomatoes , sliced thin
1/4 cup of Pepper Jack cheese
Salt and pepper, to taste
  • Preheat oven broiler. Preheat a large cast-iron skillet, or some other oven proof fry pan.
  • Drizzle in some oil. Add the bell pepper and the onion and saute until they're tender.
  • Spread the soy sausage in an even layer with the soy sausage on the bottom of the pan.
  • Scramble the eggs and add salt and pepper to taste.
  • Pour the scrambled eggs over the mixture in the bottom of the pan.
  • Cook over medium heat until the eggs are set along the edges.
  • Sprinkle the cheese over the cooked egg mixture and arrange the tomato slices over the whole thing.
  • Bake under the broiler until eggs are set all the way through and it's starting to brown and puff up.
