Salad - take me away!

I had picked up a beautiful avocado at the farmers market the other day. It was firm, but not too firm. The skin was tough and leathery but the inside was a cremy yellow and green that  I would have normally just have scooped out of it's leathery bowl with a spoon without any garnishes at all.
However, I went digging around for a recipe that I could use to create something colorful and tasty that I could have as an entree and my friends could have as a side dish.
I've sort of been on an Island kick the last few weeks so I grabbed a mango to add to the mix and looked up some Caribbean recipes that used these two ingredients.
In no time at all, I found a basic salad recipe that combined my two ingredients in a simple dish that is so easy to make. It's a simple, tasty salad tht will transport you to a sailboat anchored just off a beautiful island in the Caribbean....at least that's where it took me for a few minutes, at least.
Mango-Avocado Salad
2 mangoes, peeled, pitted and chopped

1 large avocado, peeled, pitted and chopped
1/2 cup of scallions, chopped
2 teaspoons of olive oil
1 tablespoons of lime juice
1 tablespoon of tangerine or ornge juice

1 tablespoon of cilantro leaves
  • Place the first three ingredients in a bowl. Toss gently.
  • Mix the oil and the citrus juices together
  • Pour over the salad and garnish with the cilantro.
