Cool as a cuccumber on the way to a diet

I'm getting a little envious of my friend who has dropped 20 pounds in short order.
If I'm going to ever lose weight I'm going to do like he did and just start eating right. No more cheesecake for breakfast and no more black bean burgers for lunch.
It's going to have to be grains for breakfast, a sensible lunch and and a salad for dinner....or some combintion of that.
I'm not a big salad eater, because frankly, I don't like lettuce all that much.
I remembered, however, that Steve's aunt from VietNam once told me that people in Asia don't eat salad. Vegetables take the form of sliced and sometimes pickled veggies.
Very simple, but very tasty crunch side dishes that are the perfect accompaniment to any meal and it makes a good meal all by itself.
I may not stick to the diet as well as he has, but salads like this will make it a lot easier.
(Please note that Vegetarian On A Budget is not going to become a diet blog, but I may have more "skinny" foods in the future.)
Cool As A Cuccumber Salad (with a hot twist)
1 cuccumber cut into thin slices
1 carrot cut into matchsticks
1/4 cup of thinly sliced red onion
1/2 cup of rice vinegar
1/4 cup of sugar
1 teaspoon of  sriracha sauce
A pinch of salt
  • In a microwavable small bowl mix the rice vinegar, the sugar, the chili garlic sauce, and the salt.
  • Heat the bowl in the microwave for 45 seconds.
  • Stir the vinaigrette until the sugar is completely dissolved.
  • In a medium size bowl add the sliced cucumbers, carrots, and red onion.
  • Pour vinaigrette over the cucumber mixture until well tossed.
  • Cool in the refrigerator for 30 minutes before serving.

 Vegan.
