It's like a pizza...with one tiny difference


I was craving a pizza the other day, but I didn't want a whole pie. When I was a kid, we rarely had pizza at home. It was one of things that I ate at friends' houses or at a pizza parlor when we went to one with our church youth group. Other members of my extended family made a super-thick crusted Sicilian pizza-like dish.
At home, when I begged my grandmother to make a pizza, she'd make me my own personal pizza using an English Muffin for the crust.
That would be just what I'd have. Even if I went off my diet, I could minimize the calories by doing a bit of portion control.
English Muffins are really originally from England. There, they are known as Breakfast Muffins. They are most often eaten smeared with butter and jam.
Americans are most fond of the muffins with eggs and meat in a paper bag from the drive through.
So, conscious of my vow to eat more reasonably-sized portions, I set off to make my pizza.

Really Personal Pizza

1 English Muffin
2 tablespoons of prepared spaghetti sauce
1/2 cup of thinly sliced onion
1/2 cup of green pepper, cut into tiny chunks
1/2 of a tomato, seeded and diced small
1/4 cup of shredded Mozzarella cheese
• Slice the English Mufin open. Toast it.
• Spread the sauce over the whole surface of the muffins.
• Pile the rest of the ingredients on the pies and bake in a 350 degree oven for about 7 to 10 minutes or until the cheese is bubbly.

Vegetarian.
