It's not so pretty, but this veggie fast food is so good

The kids love the "crunch wrap" from that national chain that chihuahuas used to "quero".
I decided to try my hand at recreating that soft and crunchy dish and to make it with  vegetarian twist. That's something that's not available at that place the little dogs craved.
That's the advantage of making your own food, you can do it quickly and really have it your own way.
The appeal of the crunch wrap is that it has a crispy layer wrapped around a soft layer wrapped around a cheesey and, in this case, vegetable layer.
And, you can make this so fast that it is actually, faster than fast food.
I haven't actually eaten one of the restaurant version of the meal, but the kids say this is an improvement on what you can get in the drive-thru. And, I can attest to the fact that is is not only better, but a lot less expensive.
This is not the prettiest dish when it's sitting on the plate, but when you bite into this dish, you get a burst of flavor and cheesiness  that will more than make up for it's drab appearance. 
You can be creative with this chaging the filling to suit your taste and you can, for the carnivores in your life, add a bit of flesh. The veggie version is, I believe, the far superior version.
Veggie Crunch Wrap
4 10" tortillas
10 ounces of pinto beans, mashed
1/2 lime, squeezed
1 teaspoon of cumin
1/2 teaspoon of cayenne pepper
1/2 of an onion, diced small
1/4 of a green pepper, diced small
1 ounce of mushrooms, thinly sliced
2 ounces of cheddar cheese, grated
2 ounces of pepper jack cheese, grated.
  • Mix the beans, lime juice, cayenne and cumin.
  • Place about half of the mixture on a tortilla and spread it in a circle about 3 inches in diameter in the center. Do the same with a second tortilla.
  • Divide the veggies and cheese evenly between the two tortillas.
  • Heat about an inch of oil in a skillet on medium-high.
  • Microwave the tortillas on high for about a minute or until the cheese starts to melt.
  • Bring the edges to the middle of the tortilla from six ends of the tortilla and pull them together in the middle.
  • Place the first tortillas, seam side down, in the center of the other tortillas.
  • Fold in a similar fashion  and place each one, seam side down, into the oil.
  • Fry for about 15 seconds, until it is golden. Flip and fry for another 15 seconds until the other side is also golden.
  • Serve with salsa and/or sour cream for dipping.
