A low carb alternative to French Toast that just happens to taste great


I was out of bread the other day but still I wanted to have French Toast.
Looking around I found some tortillas in the pantry and I cme to a great conclusion: not only was I going to have the French Toast that I wanted, but I could cut out  some carbs.
I promised myself I wouldn't go crazy counting calories and carbs and all that as I try to lose weight. I was just going to eat sensibly.
But when the opportunity arose to cut some carbs I jumped on it.
Even if you're not on a diet these are great snacks. They taste just like the French Toast you had as a kid, but they're thinner and crispier.
Keep in mind, however, that the tortillas are not quite as absorbent as thick slices of soft bread so you have to soak them  a bit longer in the sweet egg mixture.
The result is a sticky sweet crisp. I'm guessing that it would taste wonderful under a big scoop of vanilla ice cream.
My carnivorous daughter, Amanda, suggested that it would taste great wrapped around some sausage. If you're cooking for a mixed crowd, it might be worth a try to keep the meat-eaters happy.
French Toast Triangles
3 tortillas
2 eggs
2 tablespoons of honey
1/4 teaspoon of salt
1/4 teaspoon of cinnamon
1/2 teaspoon of vanilla
3 tablespoons of margarine, melted
  • Cut the tortillas in quarters.
  • Mix the eggs, the honey, the salt, the cinnamon, the vanilla and the margarine in a shallow dish.
  • Spray some oil or melt a bit of butter in a skillet.
  • Dip the tortilla quarters, two or three at a time, in the mixture.
  • Place the quarters in the pan and cook until they begin to brown.
  • Flip the quarters and brown the other side.
  • Serve with butter and syrup.
