Mediterranean melt brightens up your bread

Sometimes, you just want something cheesey and salty that's quick and simple to make. A snack or a bread to do with a soup or salad, this petit pan is a something you can have to the table in almost no time at all.
These are easy to make with ingredients you probably already have around the house. With olives and scallions it has a bit of a Mediterranean flavor, but this little bread would go well with all kinds of foods.
If you don't like black olives, you could use green peppers or mushtooms. You could use roasted red peppers or green olives with pimentos for a different sort of taste.
The english muffins are the perfet basefor these because they are crispy and soft all at the same time.
Play with the recipe and see what works best for you. This is really fast, good food. It is bursting with flavor and oozing with cheesy goodness.
Cheesy Olive Melts
1 cup of black olives, chopped
1/3 cup of scallions, chopped
1 1/2 cups of  Cheddar cheese, shredded
1/2 teaspoon of curry powder
1/2 cup of  mayonnaise
1/2 teaspoon of salt
8 English muffins, split in half
  • Preheat oven to 400 degrees.
  • Combine olives, scallions,  cheese, curry powder, mayonnaise, and salt. Mix well.
  • Spread the mixture on the English muffins.
  • Arrange the muffins on a cookie sheet.
  • Bake for 10 minutes.
