A new way with Peanut Butter

I have never outgrown my love of peanut butter sandwiches.
Peanut butter is a great source of protein. As vegetarians we have to get our protein from sources other than the flesh of other beings and there is no tastier way to get it than from peanut butter. Of course, it's a source of fat too, but we won't worry about that today.
As long as you don't overdo it like I tend to do, peanut butter is probably pretty darned good for you.
When I was a kid, I ate peanut butter sandwiches at every opportunity. By the time I was in high school, my mother could always tell if I had borrowed her car because there was peanut butter on the steering wheel.
The old standby of peanut butter and jelly was not really my favorite. I preferred jelly with cream cheese and peanut butter with fresh fruit or with honey.
And so, over the years, I have tried to find new and interesting ways to eat my favorite protein source. This was today's version.
Peanut Butter and Banana Rolls
1 whole wheat tortilla
2 tablespoons of peanut butter (get the natural kind if you can afford it)
1 teaspoon of honey
1 banana, mashed
1/2 teaspoon of cinnamon
  • Spread the peanut butter on the tortilla, covering the whole surface
  • Spread the honey over the peanut butter, mixing the two flavors together as you go.
  • Put the mashed banana in a wide line from one end to the other in the middle of the tortilla.
  • Sprinke the cinnamon over the whole mixture.
  • Roll it up like a burrito and enjoy.
