Take your breakfast with you

Sometimes you need a fast, portable breakfast or something a little fancier for for a brunch with family and friends.
Quiche is always a safe bet when it comes to a breakfast or brunch meal. Little, bite-sized quiches are as fun as they are tasty.

Traditionally, quiches have been made with ham or bacon or other meat, but for those of us who don't eat flesh, there are plenty of options for quiche.
Cheese, of course, can be a main add-in, but there are all kinds of vegetables you can add to the creamy eggs.
I have had quiche with beans in it, but I didn't care for it so much, though I am a big fan of beans. This recipe is for just the basic cheese omlette, but you can add whatever kinds of veggies you want.
1/2 cup of milk
Mini Cheese Quiches
2 sheets of puff pastry
3 eggs, lightly beaten
4 tablespoons of thickened cream
1/4 cup of grated cheese
1 teaspoon of paprika
2 green onions cut into circles
  • Cut rounds of puff pastry (more than the tin). Put in the tin and trim
  •  Bake for 5 minutes in hot oven
  • Combine milk, eggs, cream cheese and paprika. Mix well.
  • Divide the onions among the crusts.
  • Pour eggs and cheese mixture over the onions.
  • Bake for 15 to 20 minutes.
