Creamy lemon goodness

Oy! Stuck at the office again and dinner time had already passed
Stomach growling, I headed for the fridge where I might find something. As I hadn't been to the grocery particularly recently, I wasn't too confident that I would find anything to satisfy my cravings.
Some withering scallions. Half a bag of dry egg noodles. A single serving pack of cream cheese. A lemon.
Yeah. Well, maybe, I'd just try to work faster and go home to eat.
A bit later, I was hungry enough to get creative.
It's funny how when you're hungry enough, you'll find something to eat. It turns out, however, this was pretty darned good.
This is not a diet food, but sometimes you have to stray a bit from your weight loss plan if you are in a situation where you have to work with what's available. When you're on a budget, you have to make do with what you have because you are not going to hit the drive thru.
So, get creative and enjoy.
Creamy Lemon Pepper Pasta
1/2 bag of egg noodles
2 cups (more or less) of water
2 scallions, white parts only, sliced very thin
Juice of one lemon
2 teaspoons of ground black pepper
1 ounce of cream cheese
  • Put the noodles, the water and the scallions in the casserole. Microwave it on high for 2 minutes, stir and microwave for another 2 minuttes. Most of the water should be absorbed.
  • Pour the lemon juice over the noodles and stir. Sprinkle with the pepper and stir again.
  • Plop the cream cheese on top and microwave for 30 seconds.
  • Stir and return to the microwave for another 30 seconds.

Vegetarian.
