Light and savory fast food with just a few ingredients

 I have to admit that when I first saw this recipe, I kind of scrunched up my nose a little bit and thought, "Maybe not..."
I love both apples and onions. I had not considered the two of them together, however.
Though I have had both items in some dishes there are usually lots of other things mixed in and the taste is usually sweet.
This was savory. This was a little salty.
This was going to be interesting.
I was drawn to the fact that I could be eating a meal in fifteen  minutes or less.  I like fast food...not the kind you get passed through your car window. Instead, I prefer the kind that is fresh, easy to prepare and - in some remote fashion - good for you.
What the heck, let's give this unusual combination of flavors and spices a whirl.
Light and savory, Apples n' Onions - I happily discovered - is the perfect snack when you want something a little different.

Apples n' Onions
2 large apples, cut into small bits
1 large sweet onion
Salt, cumin, balsamic vinegar in a small amount, then to taste in larger amounts
1 teaspoon of olive oil
  • Saute the onion and apples in a pan with the olive oil over medium heat.
  • Add the spices and keep cooking until the onions are clear (about 10 minutes).
  • Eat alone as a snack or serve over rice or polenta as a meal.

Vegan.
